I've used Axialis' ScreenSaver Producer...it does a VERY good job. It worked so well, I made a screensaver for the company I worked for - everyone loved it and 3 years later it's still the default screensaver for them.

I've used VirtualDub to do this. Doesn't work with all files, but it definitely helps in the trimming department. It's free, quick, pretty easy and the results are quite good. Just be sure to change the compression method from default which is 'uncompressed'...it'll eat up your hard drive in...
