Planters Punch

A rare self-indulgence but quite delicious in hot weather.

This recipe I give to thee,
Dear brother in the heat.
Take two of sour (lime let it be)
To one and a half of sweet,
Of Old Jamaica pour three strong,
And add four parts of weak.
Then mix and drink. I do no wrong —
I know whereof I speak.

Sour=Lime
Sweet=sugar cane syrup in the classic recipe, but orange or pineapple juice works fine and isn't quite as sickly.
Strong=Rum
Weak=Water, soda-water or ice, or any combination of these. Lemonade also works.

You can vary the proportions to taste, some people have sweet tooths, some don't. If it is too sweet, adding a small dash of Angostura bitters will give it some edge. But remember that you can always add more but you can never take it out again.

Well, now I'm in St. Augustine, but it's still Jack and Coke. Of course, I'm open to suggestions. But I have to tell you, my drink's recipe is about 50% Jack, 50% Coke.

for alcoholic: good Moravian or Australian Wine
and for non-alcoholic? Peps/Coca-Cola for most part

Of late I have been aging my Everclear in Ball jars packed with berries and a little raw sugar for 2 weeks then straining it through a jelly bag; then pouring it over ice with a splash of soda.
